Stretched curd cheese made with whole cow's milk.
The typical shape is pear-shaped with a sub-terminal choke, smooth surface, approximately 6-10 cm in diameter.
Smooth white to yellowish rind. Soft and pasty paste with a heart of whey butter, ivory white in colour.
The Colantuono family is inextricably associated with the tradition of transhumance.
This ancient practice was recently recognized by Unesco as a World Heritage entity.
